主要職責
- 負責日常的食材處理及烹調工作
- 督導並培訓中級及初級廚師
- 協助副行政主廚及行政主廚研發新菜式及菜單
- 確保所有廚房員工的食物衛生均達到高級水平並遵守職安健守則
- 監管餐點份量、廚餘以維持成本效益
- 確保餐點在準備、製作及上菜過程均維持最高質素
- 管理所有有關食材準備、收貨、儲存及衛生的既定程序及政策的知識
- 對所有菜式由食譜、製作方法以至上菜標準都深入掌握
- 懂得操作廚房內所有設備,確保其運作正常並於發生故障時即時通報
- 有需要時須不定時工作
- 執行其他由上司指派的職務
Key Responsibilities
- Responsible for daily food preparation and cooking tasks assigned by Sous Chef or Chef de Cuisine
- Supervise and provide training to any Demi Chef or Commis
- Assist Sous Chef and Chef de Cuisine to develop new dishes and menus
- Ensure all kitchen staff have high standards of food hygiene and follow the rules of health and safety
- Monitor portion and waste control to maintain profit margins
- Ensure that the production, preparation and presentation of food are of the highest quality at all times
- Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation
- Full awareness of all menu items, their recipes, methods of production and presentation standards
- Operate and maintain all department equipment and reporting of malfunctioning
- Work on irregular hours when necessary
- Perform any other duties (in the capacity as Chef de Partie) as assigned by supervisor(s) from time to time
入職要求
- 八年或以上相關經驗,當中至少三年須為督導級崗位。如有醫院或酒店工作經驗可獲優先考慮
- 良好廚藝及對中式菜淆有豐富經驗和知識
- 獨立管理一個廚房分部運作的知識與能力
- 能適應轉變並願意嘗試新思維及工作程序
- 工作態度正面並能與其他同事充分發揮團隊合作
- 良好的中文對話及寫作能力
Job Requirements
- At least 8 years’ relevant experience preferably in hospital or hotel industry, of which 3 years should be in a supervisory role
- Good cooking skills and knowledge in Chinese and Asian cuisine
- Knowledge and ability to run a section without close supervision
- Adaptability to change and willingness to embrace new ideas and processes
- Positive manner and team player qualities
- Good command of written and spoken Chinese
薪酬及僱傭條款
聘任將以為期三年的合約形式進行,並設有約滿酬金。合約期滿更新將視乎工作表現,並需雙方同意。薪酬待遇將視乎申請人的資歷及工作經驗釐定。
Compensation and Employment Terms
We provide a unique employment experience for people seeking careers in hospital and healthcare industry; and offer competitive remuneration packages to the successful candidates. Appointment will be made on a 3-year contract with contract-end gratuity, renewable subject to good performance and mutual agreement.
