Responsibilities:
Ensure that kitchen operations and standards are aligned with the respective corporate strategy, and initiatives of hotel. Establish and consistently maintain hotel specifications and standards;
Maximize associates’ productivity using multi-skilling, multi-tasking and flexible scheduling to meet the financial goals of the business as well as guests’ expectations;
Co-work with the food and beverage service manager in the preparation of the annual food and beverage business plan, as well as F&B marketing programs to drive sales, increase outlet traffic, and broaden the customer base;
Ensure that all hotel, company and local rules, policies and regulations relating to financial record-keeping, money handling and licensing are adhered to;
Assist with inventory management and the on-going maintenance of the hotel’s operating equipment and other assets;
Monitor the stewarding team to ensure strict adherence to Hong Kong’s food safety and hygiene regulations, maintaining a certified hygiene supervisor/manager standard;
Coordinate with event teams to deliver seamless catering for tournaments, banquets, and patrons functions;
Lead, train, and motivate the F&B kitchen team to deliver exceptional service and uphold professional standards.
Requirements:
Certificate or above in Hospitality, Catering Management, or Culinary Arts;
Minimum 10 years of culinary experience with the background of food and beverage outlets including the restaurants in Western and Chinese, Café, Bar and Banquet operation, including 3 years in a managerial role is preferable;
Certified Hygiene Supervisor or Manager with additional certifications (e.g., HACCP) are a plus;
Expertise in menu development, costing, and food presentation;
Proficiency in inventory management and F&B software (e.g., MS Office, restaurant management software, POS, cost control system);
Strong problem-solving and presentation skills with effective conflict and change management skills;
Flexible, outgoing with excellent and creativity service-oriented personality;
Good command of spoken and written English and Chinese.
